You're already onto a winner with the Outi pizza oven; you'll be creating authentic, flavoursome woodfired pizzas in no time. Here are some tips to help you achieve the perfect pizza.

Fuel

Outi pizza ovens offer the flexibility of a choice of fuels. Choose from hardwood pellets, seasoned wood or charcoal. For a truly authentic pizza, enriched with the aroma of firewood, be sure to use our 100% Ash hardwood pellets or kiln-dried hardwood pieces.


Temperature

Crank up the heat to 3350–400°C/662–752°F for optimum pizza cooking temperatures. This should only take about 15 minutes. The handy temperature gauge will help you to monitor this without needing to unnecessarily open the door.


Lighting options

We recommend our own natural firelighters, made specifically for the Outi oven. It's vital to use natural firelighters. Avoid the use of kerosene firelighters or those with other similar additives. These chemicals can soak into the oven floor and can alter the taste of the food. 


Timing

Once you've reached the optimum cooking temperature, your pizzas won’t take long to cook. Your pizza will be perfectly cooked in 2–5 minutes depending upon the thickness of your pizza base.


Lighting the oven

  • Keep the oven door in position. It should only be removed to place or retrieve food from the oven.
  • Fill the pellet tray with your fuel of choice. 
  • Place a firelighter towards the front-end of the box
  • Ignite the firelighter and place the pellet tray back in the oven
  • When the fuel is completely lit, use the feeding shovel to add small quantities of fuel to the oven to achieve the required cooking temperature. Ensure that the fuel in the box is completely lit before adding more.
  • The Outi Pizza Oven will be at the optimum temperature in approximately 15-20 minutes, this ensures the pizza stone also gets hot. A hot pizza stone ensures you get a nice crisp pizza base. Periodically feed the fire box with fuel to keep the temperature high.

Top tip

If pellets are to be used, use pellets measuring 3 cm (1.25”) or less. This will ensure a perfect cook cooking temperature. Palette exceeding this size will burn at a slower rate, producing a lower temperature for cooking.
