Wood Fired Porterhouse Steak

This is what wood-fired grilling is all about.

Ingredients

1 x 4 inch porterhouse steak (for two people)

Salt and cracked black pepper to taste

1 teaspoon olive oil

Parsley/coriander sauce (optional)

Method

  1. Light the Outi Pizza Oven and let it get to temperature after 10-15 minutes.
  2. When ready to cook, rub the olive oil over the steaks. The steaks shouldn't be oily, the oil is only there to help the salt and pepper stick
  3. Once the oven is hot enough, place the meat onto the sizzler pan and cook for about six minutes and then flip over.
  4. Continue to grill for a further 6 minutes while keeping an eye on the steak. Test the cooking of the steak with a small cut near the middle. Check if that’s how you want to eat it, this should be medium / rare. Or continue to cook for a longer period to get the desired steak.
  5. Let stand on a warm plate for about 10 minutes and then cut into slices. Serve with a green salad and a garlicky parsley or coriander sauce (Recipe below).

Parsley/Coriander Sauce Recipe

To make the parsley sauce, blend 80g chopped flat leaf parsley, 3 cloves garlic, 125ml olive oil, 2 teaspoon oregano, Juice of one to two limes, 1/2 teaspoon chilli flakes and salt and pepper until smooth. For a spicier touch, substitute coriander and add two chopped green chillies to the blend.
