
Classic Tomato Pizza Sauce

The rich taste of our classic tomato pizza sauce is achieved by slowly cooking it until its consistency is thick and glossy. The combination of sweet and juicy tomatoes infused with garlic, salt, and basil make this the perfect pizza sauce for your Neapolitan Pizza Dough base.
It is essential to choose good quality tomatoes since they affect the flavour of your sauce. We prefer canned San Marzano tomatoes, which are typical for Neapolitan pizzas.

Ingredients
It makes enough sauce for 8 x 12” pizzas
- 2 tbsp olive oil
- 1 large garlic clove, crushed
- 800g canned tomatoes (San Marzano if possible)
- 1 small bunch basil, finely chopped
- 1 tsp sea salt
- 2 heaped tsp white sugar
- Freshly ground black pepper
Method
- Heat the oil in a pan over medium heat and fry the garlic for about a minute
- Tip in the tomatoes and crush them with a fork if they are not pre-chopped
- Add the remaining ingredients and simmer, uncovered on low heat for 25-30 minutes until it has thickened and reduced - too watery, and you’ll get a soggy pizza base
- For a smoother sauce, blitz it with a hand blender
- The sauce can be used straight away or stored in an airtight container in the fridge and used within a week.
